Mighty Turkey Club with Avocado, Herbed Tomatoes & Lemon Aioli
Sometimes a really good sandwich – like a really, really good sandwich – can make your day. This is mine. The most epic of lunches. For me, a sandwich like this starts with One Mighty Mill bread and a pairing with the very best toppings. (Chef Tony)
INGREDIENTS
For the aioli
1 cup homemade or jarred mayonnaise
1 Tbs. fresh lemon juice plus 1 tsp. fresh lemon zest
1 small garlic clove, minced
1/2 tsp. chopped fresh thyme
Kosher salt and freshly ground black pepper
For the smashed avocado
1 ripe avocado, thinly sliced
1 Tbs. fresh lemon juice, more as needed
For the sandwich
2 large tomatoes, thinly sliced
1 tsp. fresh thyme leaves
1 Tbs. olive oil
12 slices OMM Whole Wheat Bread, toasted
2 cups baby spinach (about 2 oz.)
¾ lb. sliced smoked turkey
8 slices bacon, cooked
INSTRUCTIONS
- To make the aioli, in a small bowl, mix the mayonnaise with the lemon juice and zest, garlic, and 1/4 tsp. each salt and pepper. Season with more lemon juice and salt to taste.
- To make the avocado, in a small bowl using the tines of a fork, mash the avocado with the lemon juice and ½ tsp. salt. Season with more lemon and salt to taste.
- To marinate the tomatoes, sprinkle the slices with the thyme, 1/2 tsp. salt, and the oil and let sit for 10 minutes.
- To assemble, spread the mayo on the top and bottom slices. Spread the avocado on both sides of the middle slice. Stack alternating layers of spinach, tomato, turkey, bacon, and bread. Secure the sandwiches with 2 toothpicks, slice in half, and serve.
