Mighty Reuben
Serves 4


For the Thousand Island dressing  
¾ cup mayonnaise  
½ cup finely diced dill pickled  
¼ cup ketchup 
2 tsp. Sriracha  
1 tsp. Dijon mustard  
Fresh zest of 1 lemon 
For the sandwich  
8 slices OMM sliced bread  
8 slices Swiss cheese (about 6 oz.) 
1 lb. corned beef 
1 cup sauerkraut, drained well   
2 Tbs. unsalted butter, softened  



1. In a medium bowl, mix all of the ingredients together for the dressing.

2. To assemble the sandwich, top 4 slices of bread with 1 slice of cheese, half of the dressing, the corned beef, sauerkraut, the remaining dressing and the remaining 4 slices of cheese. Spread the butter on the outside of each sandwich.

3. To grill the sandwiches, heat a sandwich press or set a large heavy-based skillet over medium-low heat for a couple of minutes. Add the sandwiches, evenly spaced (you may need to work in batches). Cook, flipping after 2 minutes, until the sandwiches brown well and the cheese melts, about 5 minutes.

4. Cut in half and serve.
