Memorial Day Bagels

INGREDIENTS

For the Grilled Salmon Burger and Lox 
6 oz. cream cheese, softened to room temp  
½ cup thinly sliced fresh chives  
4 salmon patties (1 lb.)  
1 Tbs. olive oil  
Kosher salt and freshly ground black pepper 
4 One Mighty Mill Everything Bagels  
1 Tbs. chopped capers 
½ red onion, thinly sliced 
1 tomato, thinly sliced 
1 cup microgreens or spinach  
1/2 lemon, cut into wedges  

 

 INSTRUCTIONS

  1. Prepare a medium-high fire on agas or charcoal grill.
  2. In a small bowl, mash the cream cheese with the chives.
  3. Clean the grill grates well and lightly brush the salmon patties with oil and sprinkle with salt and pepper. Grill, flipping after a couple of minutes, until the burgers have good grill marks and are still a little pink in the center, about 5 minutes total.
  4. Toast the bagels on the grill and then top with the cream cheese, the salmon burgers, capers, onion, tomato, and greens. Serve with the lemon wedges.

 

For the Mighty BBQ Turkey Burgers 
1 red onion, thinly sliced  
Kosher salt and freshly ground black pepper 
4 turkey burger patties (1 1/4 lb.)  
4 One Mighty Mill Classic Plain Bagels  
4 thick slices smoked cheddar (¼ lb) 
6 oz. BBQ sauce 

   

 INSTRUCTIONS

  1. Prepare a medium fire on agas or charcoal grill.
  2. In a small bowl, toss the onion with ½ tsp. salt and pepper. Grill the onion, flipping every couple of minutes, until it has good grill marks and becomes tender, about 10 minutes.
  3. Sprinkle the turkey burgers with salt and pepper and grill, flipping after a couple of minutes, until the burgers have good grill marks and are completely cooked through, 8 to 10minutes. 
  4. Toast the bagels on the grill and top the burgers with the cheese to melt. To serve, set the burgers on top of the bagels, add the onions and BBQ sauce, and enjoy!
