For the OMM Hot Feta Spread
1 cup crumbled feta (about 6 oz)
¼ cup pickled jalapeno slices, drained and chopped
1 tsp. dried oregano
Kosher salt and freshly ground black pepper
¼ cup olive oil, more as needed
For the Smashed Avocado
1 ripe avocado
1 Tbs. fresh lemon juice, more as needed
For the Sandwiches
2 One Mighty Mill Whole Wheat Plain Bagels, to taste
1 Tbs. olive oil
4 large eggs
¾ cup roasted broccoli florets
½ roasted red pepper, thinly sliced
- Make the feta spread: Add the feta, jalapeno, oregano and ½ tsp. each salt and pepper to a food processor and, while processing, add the oil in a thin steady stream until the mixture becomes smooth and uniform. Add more oil and process as needed.
- In a small bowl, mash the avocado with the lemon juice and ½ tsp. salt. Add more lemon and salt to taste.
- Heat a 12-inch skillet over medium heat for 2 minutes. Add the oil and once it’s shimmering hot, add the eggs and sprinkle with salt and pepper. Cook until the eggsset, about 2 minutes, then flip and cook until the eggs just cook through, about 2 more minutes. Add the broccoli and peppers to reheat.
- To assemble the sandwiches, spread the feta and avocado spreads on both sides of the bagels. Top with the eggs and vegetables and serve immediately.
