Curried Chicken Salad Sandwiches with Grapes and Greens
A drizzle of oil and lime juice powers this lighter take on chicken salad. The sweetness of the grapes plays nicely with the curry spice while OMM Power Grains bread serves as the perfect base for this colorful pairing. Curried Chicken Salad Sandwiches with Grapes and Greens

INGREDIENTS
For the chicken salad:  
3 Tbs. sunflower oil or avocado oil  
1 Tbs. lime juice  
1 tsp. curry powder  
Kosher salt and freshly ground black pepper 
4 cups diced grilled or roasted chicken breast  
2 cups grapes, halved  
¼ cup coarsely chopped fresh cilantro 
2 scallions, trimmed and thinly sliced   
 
For the sandwiches:
8 slices OMM Power Grains bread, toasted  
2 cups baby arugula or 8 slices Boston lettuce 


INSTRUCTIONS:
1. To prepare the chicken salad, in a small bowl, whisk the oil, lime juice, curry powder and ¼ tsp. each salt and pepper. Add the dressing and chicken to a large bowl and toss well. Then, add the grapes, cilantro and scallions and toss once more. 

2. To assemble the sandwich, top 4 slices of bread with the greens or lettuce, top with the chicken and another slice of bread. Secure the sandwiches with toothpicks, cut in half and serve; or wrap up and head to the beach or lake.

Spicy Cheddar Pretzels with Cilantro-Lime Dipping Sauce 
Yields 2 cups dip; enough for dipping 1 bag OMM pretzels 
 
The thick texture of Greek yogurt is preferable for this bright dip. If you want to double down on the heat of the pretzels, add a chopped fresh jalapeño to the sauce before blending.   

INGREDIENTS 
1 ½ cups plain Greek yogurt  
1 bunch cilantro, stemmed, washed, and spun dry  
2 cups baby spinach  
1 Tbs. fresh lime juice plus 1 tsp. fresh zest 
½ tsp. ground cumin 
Kosher salt and freshly ground black pepper 
1 bag OMM Spicy Cheddar pretzels

INSTRUCTIONS
1. Add the yogurt, cilantro, spinach, lime juice, zest, cumin and ½ tsp. each salt and pepper to a food processor or blender and process until smooth and bright green. Season with more salt and pepper to taste and serve with the pretzels.
