Avocado Toast 3 ways
Avocado toast has become so ubiquitous it’s almost cliché. But when it’s done right - prepared with ripe avocado, perfectly seasoned, on an extraordinary piece of toast - it can make your morning (or day). You can keep the preparation simple with just the bread and avocado or embellish it in any number of ways. Either way, make sure you use OMM bread as the base. -- Chef Tony Avocado Toast 3 ways

 

Mighty Avocado Toast with Lemon & Sea Salt  

Serves 4  

You can embellish this simple composition with most anything: a sprinkling of za’atar, a poached egg, a slice of tomato, or anything else you have kicking around the fridge.   


INGREDIENTS

2 ripe avocados  

1 lemon, juiced (about 4 Tbs.) 

1 tsp. sea salt or kosher salt, more to taste  

4 slices OMM Whole Wheat bread  


INSTRUCTIONS

1. In a medium bowl, mash the avocados with 3 Tbs. of the lemon juice and the salt. Season with more salt and lemon juice to taste.   

2. Toast the bread, top with a generous layer of avocado, and serve. 

Avocado Toast with Roasted Beets, Tahini Dressing & Broccoli Sprouts   

Serves 4

Tahini, the toasted Mediterranean sesame paste, is a wonderful complement to avocado. The recipe for this dressing will yield some extra which is perfect for drizzling on grilled or roasted vegetables. Note, any type of sprouts are cool in this recipe. 


INGREDIENTS

For the avocado: 

2 ripe avocados  

1 lemon, juiced (about 4 Tbs.) 

1 tsp. sea salt or kosher salt, more to taste  

For the tahini dressing:

2 Tbs. tahini  

2 Tbs. Lemon juice 

1 small garlic clove, minced (about ½ tsp.) 

½ tsp. kosher salt 

½ cup sunflower oil or grapeseed oil  

For the toasts:

4 slices OMM Whole Wheat bread  

4 roasted beets (about 8 oz), sliced ½-inch thick 

2 oz. broccoli sprouts (about 1 cup) 


INSTRUCTIONS

1. Make the avocado: In a medium bowl, mash the avocados with 3 Tbs. of the lemon juice and the salt. Season with more salt and lemon juice to taste.   

2. Make the dressing: Add the tahini, lemon juice, garlic, and salt to a blender or food processor and puree. While still pureeing, add the oil in a thin, steady stream so the mixture becomes thick and uniform.  

3. Assemble the toasts: Toast the bread, top with a generous layer of avocado, the beets, a drizzle of the dressing, and the sprouts and then serve.

Avocado Toast with Smoked Salmon, Radish & Greens 

Serves 4  

This Spring pairing makes for an indulgent lunch or a simple, but dressy, supper.   


INGREDIENTS

2 ripe avocados  

1 lemon, juiced (about 4 Tbs.) 

3/4 tsp. sea salt or kosher salt, more to taste  

2 oz. microgreens or baby spinach 

6 radishes, trimmed and thinly sliced  

1 Tbs. olive oil 

4 slices OMM Whole Wheat bread  

8 oz. smoked salmon  

Freshly ground black pepper 

 INSTRUCTIONS

1. In a medium bowl, mash the avocados with 2 Tbs. of the lemon juice and the salt. Season with more salt to taste.

2. In a small bowl, toss the greens with the radishes, oil, and remaining 2 Tbs. of  lemon juice.

3. Toast the bread, top with a generous layer of avocado, the salmon, and the greens mixture. Sprinkle with pepper and serve immediately.
